Yummy muffins!

Hey, I tried a new recipe I found in a Guideposts someone gave me. (I revised it and then tried it actually.) Anyway it was a hit with dh and ds so I thought I would share it here. They are very easy and really good!


Pecan Pie Muffins

1 cup light brown sugar, packed firmly
1/2 cup wheat flour
1/2 cup chopped pecans
2 eggs, beaten
2/3 cup butter, softened

Preheat oven to 350 F. Line muffin tins with muffin liners. In bowl stir together flour, pecans, and brown sugar. In separate mixing bowl beat eggs and butter together until smooth. Stir in dry ingredients until just combined. Spoon batter into muffin cups - 2/3's full. Bake for about 20 - 25 minutes. Cool on wire rack when done.

The recipe called for regular flour but I changed that, and also I think I will add flax seed next time. Let me know what ya'll think.

Oh yes you deserter! No not really. Those look so wonderful, but I have never met a pecan that I didn't like.
Oh bake sales. Those were fun weren't they. I can remember Pam making up her box cakes, and you very lovely scolding her for not cooking from scratch.
The way the Lord brings people into our lives just amazes me.

Get better soon! I understand we are in for another round of whatever this nasty stuff is. Many ladies were not at bible study last night due to illness. Think I will try and stay home.

Oh my! That is all I can say about these. I made them Saturday morning. They are the best muffins I have ever eaten. Taylor ate 4! If you can please him, you know you have a keeper.
Gotta go crack some more pecans so I can make them again!
